Today's recipe is from a friend of mine, Vickie, that spends most of her time baking a ridiculous amount of cookies and pastries. It's a pretty quick recipe so even if you're busy or if you avoid recipes that are too long to prepare, like me, you'll be able to shove those in your mouth pretty quickly.
1 1/2 cup of flour
1 teaspoon of baking soda
1 teaspoon of corn starch
2 cups of large flake oats
1 teaspoon of salt
1 cup of brown sugar
1 cup of soften butter or margarine
1 teaspoon of vanilla extract
2 tablespoon of water (use a little more if you use whole wheat flour)
1 cup of raisins
1.In a small bowl mix the flour, baking soda and corn starch together
2.Add the large flake oats and salt
3.In seperate bowl, mix the brown sugar and butter or margarine
4.Add the eggs and vanilla extract to the butter and brown sugar
5.Pour the content of the small bowl in the mix you just made; add the water and mix together.
6.Roll the dough into teaspoon sized balls and place 2 inches apart onto greased cookie pans
7.Bake at 300°F on the top oven shelf for 12 to 18 minutes
This should give you roughly 100 cookies. If 100 cookies is too much you can keep the leftovers in the freezer. Enjoy!
